    Pink Champagne Layer Cake

Posted by Kathy Gunther on 22nd Jun 2017

This is the best mail order cake I have ever ordered. The presentation out of the box is very nice with a big white bow and ribbons around the plastic cake keeper. It had no ice to unpack and comes fresh to your door. I was surprised that it made the trip unharmed since it was sent fresh. I give credit to the care taken by the US postal service. You also have to take care to follow directions how to remove the wax paper so the icing stays on the cake. The wax paper does flatten the decorations on the top of the cake. So, since the cake did not budge off the plastic base of the keeper, I am wondering if the wax paper was even needed for transit. The icing had a firm texture which was different but good. I would prefer it to be a little softer but it was still very good that way. Maybe it needs to be that way to protect the very moist delicate cake beneath. The icing is still 5 stars that way. I gave the last of the cake to my daughter who lives with friends. She texted me just to say OMG it's so good. One of her friends texted that she don't even like coconut but that cake was divine. There are different versions of pink champagne cake I know, because I have been searching for a mail order one since I last had one in Iowa. I bought the first one in a bakery in Des Moines, Iowa. The recipe is different than this one. This cake is moister and more delicious. It tastes home made was my first impression. Almost like you bought it at a bake sale. I very highly recommend this cake which has champagne and wine in it. It is a step above and memorable.
